Nadine’s Lebanese Salad

Looking for the perfect summer salad?

Lebanese salad - with cucumber, cherry tomatoes, thyme, mint, and parsley is a true garden-to-table experience during the summer months!

My friend, Nadine, is so kind to teach us how to make it! 

You know what I love about this recipe? Nadine did not measure anything!

Measuring is not for summer! Measuring can be for August-May, but it should be against the law in the summer!

Roughly - in a we-refuse-to-measure way - you need:

Twice as many cherry tomatoes as cucumber

Definitely need to use Armenian or Persian cucumbers (if you’re buying from the store, they are sometimes called “seedless” and are usually what’s in the bag of organic mini cucumbers). 

Cherry tomatoes from your garden or two containers of cherry bomb tomatoes

1/2 of a red onion

Fresh thyme, mint, and parsley

Dried mint and sumac

Extra virgin olive oil

Red Wine Vinegar or fresh lemon juice

Salt and Pepper

This will be on repeat this summer. It’s so fresh and delicious!
