Friends, this is a no stress summer recipe. I measured nothing - because it’s too hot for measuring, thinking, or even caring, honestly, at 6 pm.
Who else has a bad case of summer going on?
We’re eating at weird times, staying up way too late, and I keep forgetting what day it is, so can’t remember to put the trash out. Hello summer!
But this recipe? You’ll be a hero - no matter how full the trash can is outside.
Preheat oven to 400 degrees.
Get some fresh basil and about a pound of cherry tomatoes (or really any tomatoes from the garden).
Chop the tomatoes and place in an oven safe dish.
Season generously with zatar seasoning (I love Rita’s from @oldcountryoliveoil ).
Sprinkle with red pepper flakes.
Douse in @oldcountryoliveoil
Add a Tbs or so of capers.
Bake for 10 min.
Add a block of feta to the center of the dish.
Bake another 30 min.
During the last 10 minutes, stick a couple loaves of crusty sourdough bread in the oven to warm up.
Remove everything. Smash the ingredients together for a quick minute. Stir.
Serve with the warm bread.
Good grief. It’s so good.
Happy summer!
