Easy-Peasy Herby Cucumber Salad

Our clients are about to have Armenian cucumbers ready to harvest!

We plant Armenian cucumbers in the summer because they thrive in the Houston heat. Bonus - they are some of the yummiest crunchiest cucumbers you’ll eat!

Here’s a super simple recipe to not only put those crunchy cucumbers to good use but also use up your herbs:

5-6 cups of Armenian or Persian cucumbers sliced thin (I used a mandoline)

1/4 cup high quality EVOO like @oldcountryoliveoil

4-5 Tbs of champagne vinegar

1 tsp of salt or to taste

1 tsp pepper or to taste

1 cup of mixed fresh herbs in season

What kind of fresh herbs? Almost any of them! Depending on the time of year, I use any combo of cilantro, dill, oregano, thyme, chives, parsley, and garlic chives.

Mix well. Let refrigerate for at least an hour - the longer it sits, the better it gets (including the next day!).

This is such an easy side dish or perfect on Greek pitas or in a salad.
