Sausage & Sweet Potato Soup

You’ll love this soup, promise! It’s a great way to use up your garden greens like kale and swiss chard.

Serves 4, so I double this recipe for my crowd.

Sausage and Sweet Potato Soup

Ingredients:


1 large yellow onion, diced

2 cloves garlic, minced

Salt and pepper

1 pkg sweet Italian sausage, casings removed (about a pound)

2 large sweet potatoes peeled and diced medium

4 cups chicken broth or veggie broth

¾ cup small pasta shells

4 cups chopped greens, like kale and swiss chard

Shaved Parmesan, for garnish

Directions:

In a large soup cook onion, garlic, and sausage (mash sausage) until onions and sausage are cooked. Season with salt and pepper.

Add sweet potatoes, broth, and 2 cups water and bring to a boil. Once potatoes are slightly fork tender, add noodles and greens. Cook 8 min or until noodles and potatoes are soft. Serve with Parmesan.
