Rita’s Tabbouleh

Tabbouleh made with Old Country Olive Oil and fresh parsley and tomatoes from the garden? Next. Level.

It’s so delicious!

We made a big batch.

Here’s the recipe:

1 cup fine bulgur #1 (cracked wheat)

6 bunches of parsley, finely chopped

6 green onions, finely chopped

1 tbsp of salt

6 large tomatoes or loads of cherry tomatoes, diced

3/4 cup lemon juice

1.5 cup olive oil

Directions:

Soak bulgur in water.

Chop parsley and add to large bowl.

Chop green onion. Place in separate small bowl. Season with salt and pepper and let sit.

To chopped parsley add tomatoes, olive oil, and lemon juice.

Add salt and pepper to taste (we like it salty!).
