Let us introduce you to Herby Potato Salad.

This crisp, tangy, herb-packed potato salad is a winner!

It’s such a fun way to show off your garden dill, thyme, and chives without all the unwanted fat. Guilt-free potato salad? Yes, please!

Here’s how to make it:

5.5 pounds of potatoes - diced the size you like

1 tsp salt (more to taste)

4 Tbs Old Country Olive Oil

1/3 cup Dijon Mustard

1/4 cup white balsamic vinegar

1 cup chives, chopped

2 Tbs thyme, stems removed, chopped

3/4 cup dill, chopped

Boil potatoes until tender. Cool before assembling salad.

Add oil, salt. Stir gently.

Add dijon and vinegar. Stir gently.

Add in herbs. Stir well.

Garnish with dill sprigs. Enjoy!

Since there’s no mayonnaise or eggs in the potato salad, it’s stress free on a hot holiday! Worry about things like applying multiple layers of sunscreen - NOT your potato salad!
