Easy Weeknight Tomato Basil Pasta

I literally raised my boys on this pasta during the summer months! It’s so easy and quick.

There’s zero actual measuring, and it’s perfect for those nights when you really should have gone to the grocery store two days ago - but still haven’t.

You need:

Cherry tomatoes - whatever you’ve got growing in your garden or a container from the store.

Loads of fresh basil.

Box of angel hair pasta

1/2 stick of butter or enough Old Country Olive Oil to coat noodles

Salt and pepper

Grated Parmesan cheese

To make:

Slice cherry tomatoes. Place in a large bowl. Season with salt and pepper.

If using butter, add 1/2 stick to bowl with tomatoes.

Boil a package of angel hair pasta in salted water for 4 min.

Drain. Immediately pour on top of tomatoes while noodles are really hot. The hot noodles “cook” the tomatoes (and melt the butter if you’re using butter).

Let sit 3-5 min.

Toss and season well with salt and pepper. If using olive oil, add it as you’re mixing tomatoes with noodles - until noodles are coated.

Add roughly chopped basil.

Yell out, “Omg! This smells so good!”

Toss again.

Top with grated Parmesan.

This takes about 15 min to make!

My boys call it basil pasta. Sorry tomatoes. I see you. I know you’re there - but basil is the Beyoncé of this dish. 🤷🏼‍♀️ I double the recipe so they can eat it the next day.
