Herby Quinoa Salad

Got dill, parsley, and mint growing in your garden?

You’ll want to make this quinoa salad. Promise.

Supposedly it’s Jennifer Anniston’s recipe, but whether it is or not - it’s so delicious I’ll be making it on the regular this season when dill, mint, and parsley start showing off big time in the Houston garden.

2 cups quinoa (I use Success boil-in-the-bag quinoa because I’ve never figured out a good way to make quinoa - if you have tips, send help)

15 oz can of chickpeas

1 cup crumbled feta

1 cup salted roasted pistachios

Handful of parsley

Handful of mint

Handful of dill

1 large cucumber, diced small

1/2 purple onion, diced tiny

Mix above ingredients in a large bowl.

Mix dressing:

1/4 cup Olive Oil like @oldcountryoliveoil

1 Tbs maple syrup or agave

1 Tbs apple cider vinegar

1 tsp salt

1 tsp pepper

Pour dressing on top of the quinoa salad. Stir. It’s so good!

I’ve heard it stores for days in the refrigerator and only gets better, but we ate the entire bowl, so that theory may never get tested in our house. 🤷🏼‍♀️

I used a lot of each herb in the recipe, and it was so yum - don’t be afraid to go all in with the fresh herbs!
