Holiday Brussels Sprouts

These holiday Brussels sprouts are just what we need this December!

There’s something about the mixture of high quality olive oil, grapes, dried cranberries, and pomegranate molasses that makes this dish taste like Christmas.

Brussels are in season, so their crisp robust flavor is extra delicious.

Here’s what you need:

1 Ib Brussels sprouts, halved

1 shallot, thinly peeled + sliced

2 Tbsp Old Country Olive Oil (or as much as your heart desires 😉)

Salt + pepper

1 cup red grapes, halved

2 Tbs Old Country Olive Oil’s pomegranate molasses

1/4 cup dried cranberries

Mix Brussels sprouts with the shallots, olive oil, salt and pepper.

Heat a large skillet over medium-high heat. Add the Brussels and shallot mixture into the pan, flipping the Brussels to face cut-side down. Allow to cook undisturbed for a few minutes to brown. Cook until tender and outside of Brussels has a roasted appearance. Add oil as needed.

Next, add the grapes and a splash of pomegranate molasses and give the pan a good toss, scraping down any brown bits sticking to the pan with a wooden spoon.

Add another pinch of salt to taste.

Continue to saute until the grapes start to cook down and burst. Add the rest of the pomegranate molasses, cover with a lid for the final for 2-3 minutes to steam slightly and cook through. Brussels should be fork-tender.

Remove from heat. Garnish with dried cranberries.
